Von 2013 bis 2017 war sie festes Ensemblemitglied am Staatstheater Kassel. Dort war sie u. a. zu sehen in dem Solostück Anne Frank (Regie Dieter Klinge), als Dunjascha in Der Kirschgarten (Regie Patrick Schlösser), als Gretchen in Urfaust (Regie Volker Schmalöer), in Tyrannis (Regie Ersan Mondtag), in Die Unverheiratete (Regie Laura Linnenbaum) sowie in Maji Maji Flava (eine Koproduktion mit Flinn Works/Berlin und Asedeva/Tansania in der Regie von Sophia Stepf). 2017 gastierte sie als Katharina in Der Widerspenstigen Zähmung (Regie Volker Lechtenbrink) am Ernst Deutsch Theater in Hamburg. Seit Sommer 2017 arbeitete Sabrina Ceesay freischaffend in Berlin. Am Staatsschauspiel Dresden war sie in Ayad Akhtars Geächtet in der Regie von Nicolai Sykosch zu sehen. Am Landestheater Niederösterreich in St. Pölten spielte sie in der österreichischen Erstaufführung von Jelineks Am Königsweg in der Regie von Nikolaus Habjan.
Seit der Spielzeit 2019/20 ist sie im Ensemble des Schauspiel Hannover. Sabrina Ceesay ist u. a. zu sehen als Marie in Woyzeck, Was ihr wollt und Das Bildnis des Dorian Gray.
