Er gewann mehrere internationale Gesangspreise. 2015 wurde er in der Partie des Don Profondo (Rossini „Il viaggio a Reims“) als Entdeckung des Rossini-Festivals in Pesaro gefeiert. Noch im gleichen Jahr sang er Dottor Malatesta (Donizetti „Don Pasquale“) in Bergamo, Como, Jesi, Cremona und Pavia. Zu seinem Repertoire gehören außerdem die Rossini-Partien Dandini und Don Magnifico („La Cenerentola“), Bartolo („Il barbiere di Siviglia“), Taddeo („L‘italiana in Algerie“), des Weiteren Dulcamara (Donizetti „L’elisir d’amore“), Wagner und Valentin (Gounod „Faust“), Papageno (Mozart „Die Zauberflöte“) und Zuniga (Bizet „Carmen“). Damit gastierte er unter anderen an den Opernhäusern von Acon, Lucca, Pamplona, Oviedo, Marseille, Moskau, Toulon, Budapest und am Théâtre des Champs Elysées in Paris. Pablo Ruiz ist außerdem häufig als Konzertsänger zu hören. Auf der Bühne der Deutschen Oper am Rhein war er als Don Magnifico und Bartolo zu erleben und wird in der Saison 2021/22 wiederum in dieser Rolle zurückkehren.
