Die in Leningrad geborene Olga Shaishmelashvili schloss im Jahr 2002 ihr Studium an der Staatlichen Akademie für Kunst und Design in Sankt Petersburg ab. Seit 2011 ist sie freischaffend als Kostüm- und Bühnenbildnerin für Musiktheater, Tanz und Schauspiel an vielen bedeutenden Bühnen Russlands wie dem Mikhailovski Theater in Sankt Petersburg und dem Bolschoi Theater in Moskau sowie international tätig. Engagements führten sie beispielsweise zu den Ruhrfestspielen, an das Teatro di San Carlo in Neapel, Teatro Colón in Buenos Aires, Theater Basel, Hessische Staatstheater Wiesbaden, Theater Saarbrücken oder das Litauische Nationaltheater für Oper und Ballett in Vilnius.
Außerdem arbeitete sie u. a. für das Theater an der Wien, das Saarländische Staatstheater Saarbrücken, die Deutsche Oper Berlin und die Staatsoper in Budapest. Eine regelmäßige Zusammenarbeit verbindet sie mit den Regisseuren Evgeny Pisarev und Vasily Barkhatov, für den sie eine Vielzahl an Kostümbildern entwarf, darunter CHOWANSCHTSCHINA (Mussorgksi), DER SPIELER (Prokofjew) und MADAMA BUTTERFLY (Puccini). Ebenso war sie Barkhatovs Kostümbildnerin bei der Uraufführung von Aribert Reimanns Oper L’INVISIBLE, bei Puccinis LA FANCIULLA DEL WEST, Bernd Alois Zimmermanns DIE SOLDATEN, Tschaikowskijs EUGEN ONEGIN und u. a. bei Gounods FAUST.
An der Deutschen Oper am Rhein findet die Zusammenarbeit mit Vasily Barkhatov eine Fortsetzung: Olga Shaishmelashvili zeichnet in der Saison 2022/23 verantwortlich für das Kostümdesign für Wagners DER FLIEGENDE HOLLÄNDER und an der Deutschen Oper Berlin für SIMON BOCCANEGRA.
