Sein Oeuvre reicht von instrumentalen Kompositionen für verschiedenste Besetzungen bis zu ortsspezifischen Installationen, die gefundene Klangobjekte, Feldaufnahmen, interaktive Elektronik sowie von Sänger*innen und Musiker*innen live erzeugte Klänge miteinbeziehen. Gieshoffs Arbeit wurde vielfach ausgezeichnet, u.a. mit dem Royal Philharmonic Society Composition Prize, dem Mendelssohn Scholarship, dem Stipendium der Hans Werner Henze-Stiftung und dem Darmstädter Musikpreis. Er ist Dozent für Komposition an der Akademie für Tonkunst Darmstadt.
