Während und nach dem Studium spielt sie in Stücken von Marc von Henning, Nina Pichler und RegisseurInnen der Theaterakademie. Neben dem Schauspiel entwickelt sie zusammen mit dem Choreographen Gianfranco Celestino die Veranstaltungsreihe »Friday Island«, die sich mit Themen der zeitgenössischen Kunst auseinandersetzt. Katharina Bintz lebt und arbeitet als Schauspielerin und Sprecherin in Hamburg und Luxemburg.
Am Deutschen SchauSpielHaus Hamburg spielt Katharina Bintz in »Alles Weitere kennen Sie aus dem Kino« und war in der Spielzeit 2014-15 zudem in »Geschichten aus dem Wiener Wald« in der Regie von Henri Hüster (Studienprojekt III) im MalerSaal zu sehen.
